Chicken Lasagne Recipe

Chicken-Lasagne

I have updated this post from 2009 to include a photo of the Chicken Lasagne. I always like to have a look at a picture of the end result before I cook!

I find lasagne a great dish to cook for the family on nights when we have after school activities. I can cook it earlier in the day and simply reheat it quickly when we arrive home.

My children do not love traditional lasagne though. I do cook it but have found that they prefer chicken lasagne and therefore eat more of it. This suits me too as it actually has some vegetables in it!

This chicken lasagne recipe is easy to cook. (Mr I can even cook it.) It does however take some time to prepare as you need to cut up all the vegetables and chicken.

I love pictures with my recipes too! Women’s Weekly has a really good Vegetarian Lasagne. It does take a long time to prepare (having to grill capsicum and eggplant) but it’s well worth it. My son is a lover of soft mushy things at dinner time (too tired to chew) so it’s a good one for him.

I have never made white sauce in the microwave! Does it work? I usually use a packet mix, or make it the traditional way on the stove like my mother taught me.

Will give this one a try as I need a few prepared meals for the evenings with after-school activities. Like Gin, I’ve never made white sauce in the microwave – only on the stove. Does it taste the same?

How long does it take to prepare? I’ve always been put off by lasgane as not everyone in my house will eat it, and it seems like such a lot of work to make when I’ll still have to make another dish to go alongside it. That being said, maybe it would do for little meals for the whole week? How many serves do you get from the batch?
    Talk me into it :-)

It does take quite a time to prepare, my guess would be 45 mins, then cooking. It feeds us all (and my boys eat big serves) for two nights, so it is worth the effort for me.
