Each household has its Christmas traditions, that one thing that makes Christmas special for them. And for us, Christmas just isn’t Christmas without baking gingerbread. While you can buy it in the store, here’s the reasons why we love making it at home:

  1. It’s a great activity to do with the kids – even very little ones love choosing the shapes and doing the decorating
  2. It makes a nice gift for classmates, teachers, friends and family
  3. When you make it, you control the ingredients, especially the amount of sweetener, and can make sure there aren’t any hidden nasties
  4. The smell of it cooking in the oven is one of the true pleasures of Christmas.

Ingredients:
Method:
  1. Preheat the oven to 180°C. Spray a baking tray with oil.
  2. Sift together the flour, baking powder, ginger and cinnamon into a large bowl. Add the coconut oil and using your fingertips rub into the dry ingredients until it resembles fine breadcrumbs.
  3. In a separate bowl mix together the maple syrup, RMS, vanilla and milk. Add this to the dry ingredients and bring it together until it forms a dough like consistency.
  4. Using a rolling pin roll the dough Roll out until about 1cm thick.
  5. Using a cookie cutter, cut the dough into the desired shapes and bake in the oven for 8-10 minutes, or until brown.
  6. Remove from the oven and allow to cool on a wire rack before decorating.
