Cut up vegetables and place even amounts on two serving plates.
Slice chicken breasts in half horizontally, then cut into smaller pieces for quicker cooking in the pan.
Heat a pan on medium-high for a couple of minutes. I use a non stick pan, so don't use any oil to cook the chicken breasts. Add and heat some oil to the pan if you think they may stick in the cooking process.
Place chicken breast pieces in the pan and cook on each side for 4 -5 minutes until each side is golden brown.
Once cooked divide chicken into two and place on serving plates.
1kg of chicken breasts serves our family of seven with a few pieces left over for my lunch. If you have a smaller size family you may like to consider using less chicken.
