Pear Muffins
Recipe type: lunch box
  • 2 cups self raising flour
  • ½ cup brown sugar
  • 3 tsp cinnamon
  • ¾ cup milk
  • ½ cup canola oil
  • 2 eggs
  • 2 pears
  1. Preheat oven to 180 degrees.
  2. Sift flour, cinnamon and sugar into a bowl. Mix and make a well in the middle.
  3. Core and grate pears.
  4. In a separate bowl mix the remaining ingredients (except pear).
  5. Pour the liquid ingredients into well and mix with a wooden spoon.
  6. Add grated pear and mix lightly through.
  7. Spoon into well greased muffin pans or patty pans in muffin tray.
  8. Cooking time depends on the size and oven, but 12-15 minutes is about average for the standard patty pan size.
  9. Allow to cool for a couple of minutes in the trays before cooling further on wire racks.
