Butterscotch Self Saucing Pudding

Ingredients:
Pudding
  • 1 cup self raising flour
  • ¾ cup caster sugar
  • ½ tspn salt
  • 2 oz or 56 grams of melted butter
  • ½ cup milk
Sauce:
  • 2 tbspns golden syrup
  • 1¼ cup hot water
  • 1 oz or 23 grams butter
Method:
  1. Preheat oven to 180 degrees Celsius.
  2. Add pudding ingredients in a medium sized bowl and mix together with an electric beater for 1-2 minutes.
  3. Pour into a lightly greased oven proof dish
  4. Place golden syrup and butter into a small saucepan and stir over low heat until butter melts.
  5. Add hot water and stir until well combined.
  6. Pour gently onto pudding mixture.
  7. Place in oven and bake for 30 - 35 minutes.
  8. To check if cooked, make sure the centre is puffed and pudding feels firm when pressed lightly.
  9. Spoon cake and sauce into bowls and serve hot.
  10. NB. The first time I made this pudding, I freaked out a little with how much sauce there was. It does thicken quite quickly as it cools. If you prefer less sauce then reduce the water to about 1 cup.
