Rich Moist Chocolate Cake Recipe
- 250 grams butter
- 1tbsp dry coffee with 1 cup hot water
- ¼ cup cocoa mixed with ½ cup hot water
- 200 grams dark good quality cooking chocolate
- 2 cups caster sugar
- 1½ cups self raising flour
- 2 eggs
- 2 tsps vanilla essence
- Optional: Strawberries and cream to serve.
- Preheat oven to 150 degrees Celsius.
- In a large mug mix coffee and 1 cup of boiling water and set aside.
- In another mug mix cocoa and ½ cup of boiling water and set aside.
- Measure out all sugar and flour and have ready.
- Chop butter into cubes and melt butter in the microwave for about a minute on high (could be more depending on your microwave).
- Break up chocolate and melt in microwave for 1 min, stir and melt for 15 seconds bursts after that until the chocolate is melted.
- Add butter and melted chocolate to a large bowl, add sugar.
- Pour in coffee and cocoa and mix with a spoon until well combined.
- Add flour and beat for about a minute.
- Add both eggs and vanilla, then beat for another minute or so.
- The mixture will be very runny! Pour into a well lined 25cm round springform.
- Bake for 1 hour 15 minutes.
- Allow to stand for 10 minutes before moving to a cooling rack.
- Serve with strawberries and whipped cream!
