Candy Cane Cookies

Ingredients:
  • 2¾ cups all-purpose flour (would try self raising flour next time)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 225 grams butter, softened
  • ¾ cup caster sugar
  • ¾ cup packed brown sugar
  • ½ teaspoon vanilla extract
  • 2 large eggs
  • 1.5 cups white chocolate chips
  • 1 cup candy canes
Method:
  1. Preheat oven to 160 degrees Celsius.
  2. You can use a food processor to grind the candy canes, but we don't have one, so I simply used the good old fashioned mortar and pestle to crush them up.
  3. In a large bowl cream butter, sugars and vanilla extracts until light and fluffy.
  4. Add eggs one at a time, mixing well between adding the next or mixture will curdle.
  5. Mix flour, baking powder and salt in small bowl.
  6. Add flour mixture to wet ingredients in small batches and beat lightly
  7. Add white chocolate chips and mix with a wooden spoon.
  8. Add candy canes and mix again.
  9. Place large tablespoons on to lined baking trays, allowing room for spreading.
  10. Bake for 8 - 10 minutes, or until golden.
  11. Cookies will harden upon cooling, so leave on tray for a few minutes, then remove to a wire rack to cool further.
