Thermomix Lunch Box Recipe: Chicken & Rice Patties
  • 1000g water
  • 10g olive oil
  • 5 g (1 tsp) salt
  • 250g Jasmin rice
  • 500g chicken breast, roughly chopped
  • 100g carrot, peeled and roughly chopped
  • 40g springs onions white stalks
  • 160g grated mozzarella cheese
  • 3 eggs
  1. Measure water (1000g), oil (10g) and salt (5g) into the bowl.
  2. Place the small steaming basket into the bowl and then weigh in rice (250g).
  3. Line the varoma tray with baking paper and place the roughly chopped chicken pieces (500g) onto the lined tray. Place the varoma into position with the lid on top.
  4. Cook 25 minutes/varoma/speed 4. Check to see if chicken is cook through otherwise cook for a further 5 minutes.
  5. Set aside the chicken and rice. Empty out any remaining water from bowl and roughly dry the bowl.
  6. Preheat oven to 200 degrees, fan forced.
  7. Add cooked chicken to bowl and shred 3 seconds/reverse/speed 4. Check to see if it is shredded to your liking. Otherwise shred for another second or two. Set aside.
  8. Without washing bowl, add carrot (100g) and spring onions (40g) to the bowl and chop 4 seconds/speed 5. Set aside.
  9. Add eggs (3) to bowl and mix 15 seconds/speed 5.
  10. Add all the ingredients (except only half the cheese) back into the bowl: chicken, carrot, shallots, rice and cheese (80g). Mix 15 seconds/reverse/speed 4. If it needs any further mixing use your spatula.
  11. Spray muffin trays with cooking spray and spoon mixture into the trays. Top with remaining cheese.
  12. Cook for 15 minutes or until golden brown.
  13. Allow it to slightly cool in the tray for a few minutes before moving the patties to cooling racks.
To Make A Double Batch: Double all of the ingredients. At step 10, mix the ingredients in a large bowl instead of the TM bowl.

Add a teaspoon of stock paste, tamarin or herbs (fresh or dry) at step 10 for extra flavour.

Use leftover chicken or rice to make the patties

Add a mix of different veggies

Leave out the cheese and add yeast flakes on top to make these patties dairy free.
