Broccoli fritters (gluten free)

  • 2 medium heads of broccoli (approx 500 grams cut up without stems)
  • 1 onion
  • 4 short cut rash bacon
  • 5 eggs
  • ½ cup almond flour
  • salt and pepper to taste
  • 4 tbsp coconut oil
  1. Finely chop bacon and onion. Heat 1 tbsp coconut oil in a frying pan on a medium heat and fry the bacon and onion until the onion is translucent.
  2. Transfer bacon and onion to a medium sized mixing bowl.
  3. Roughly chop the broccoli and place it in the food processor Pulse until all of the broccoli is finely chopped.
  4. Add broccoli to the mixing bowl. Beat the eggs and pour onto broccoli. Add the almond flour and salt and mix well.
  5. Heat remaining coconut oil in the frying pan on a medium heat. You can wash the frying pan, but I left it as is for extra flavour.
  6. Use a ¼ cup measure and scoop out the fritter mixture. Place 4 - 6 in the frying pan depending on your size.
  7. Fry each fritter for 3 -4 minutes each side. Check the bottom is a golden colour before flipping over before frying again on the other side.
  8. Repeat the process until you have used all mixture.
  9. Serve with a generous dollop of garlic aioli and enjoy!
