Rice cake slice
  1. Line a slice tray with baking paper.
  2. Crush rice cakes by hand into a large bowl.
  3. In a bowl mix melted coconut oil, tahini, rice malt syrup and vanilla.
  4. Pour the rice malt syrup mix onto the crushed rice cakes and mix well.
  5. Pour into the lined tray and press down firmly using your hands.
  6. Place in the fridge to set for a couple of hours.
  7. Remove from the fridge and cut into slices with a sharp knife.
  8. Store in an airtight container in the fridge.
When packing this rice cake slice for lunches, make sure you place it near the ice brick as it does soften a little when out of the fridge.
