Chocolate walnut butter
  • 2 cups walnuts
  • 2 tbsps cacao powder
  • 1 tbsp coconut oil
  • 3 tsp rice malt syrup
  • ½ tsp vanilla extract
  • ⅛ tsp pink Himalayan salt
  1. Preheat oven to 160 degrees Celsius and place the tray you will roast the walnuts on into the oven as well.
  2. Once at the required temp, place baking paper on the tray and place nuts on the tray.
  3. Bake for 12 - 15 minutes. I give the tray a shake every 5 minutes or so to prevent over cooking from hot spots in the oven.
  4. Place walnuts, cacao powder, coconut oil, rice malt syrup, vanilla extract
  5. and pink Himalayan salt into food processor and pulse.
  6. Stop every minute or so and scrape down the sides of the bowl, then pulse again.
  7. Repeat this process until the butter is the consistency you desire.
  8. Store in an airtight container in the fridge.
