Gluten Free Meatballs

Ingredients:
  • 1kg chicken mince
  • 12 rash short cut rindless bacon
  • 1 onion
  • 2 cloves garlic
  • 2.5 tsp bacon fat (or preferred cooking oil)
Method:
  1. Preheat the oven to 180 degrees Celsius.
  2. Finely chop bacon and onion.
  3. Prepare garlic for crushing.
  4. In a medium frying pan add your bacon fat and heat on a medium heat.
  5. Add bacon first and fry for a couple of minutes.
  6. Add onion and fry for a further few minutes.
  7. Add garlic and fry for another minute.
  8. Pour the bacon and onion mix into a large bowl.
  9. Add chicken mince and mix with your hands. I don't like touching meat very much so use food handling gloves for this.
  10. Roll into balls. I made our balls using about a heaped tablespoon of mixture.
  11. Place on lined baking trays.
  12. Once all rolled into balls, place in the oven for about 30 - 40 minutes (see notes).
  13. No need to turn them, just let them cook and wait for them to be ready to eat!
Notes:
This recipe makes 48 meatballs. Mine took about 40 minutes to cook, but my oven is old and doesn't seal 100% so if you have a good oven they may only take about 30 minutes.
