Ingredients:
  • 550 grams cauliflower
  • 1 clove garlic
  • 52.8 grams white onion
  • 90 grams red capsicum
  • 35 grams snow peas
  • 1.84 tsp coconut oil
  • 1 clove garlic
  • 1 tsp chilli flakes
  • 115 grams taco seasoned beef (optional)
Method:
  1. Cut up cauliflower into small pieces.
  2. Finely chop onion, capsicum, snow peas and prepare garlic for crushing.
  3. Pulse cauliflower in a blender until it is a fine consistency similar to cous cous.
  4. Heat oil in a large frying pan on a low to med heat. Add onion and fry gently for a couple of minutes.
  5. Crush garlic into pan and add chilli flakes. Fry for a couple of minutes.
  6. Add capsicum and snow peas and mix well.
  7. Add the cauliflower and mix gently until well combined
  8. Place lid on the frying pan and cook on very low temp for about 10 minutes. Test for the right texture for you. The longer it cooks the softer the cauliflower becomes.
  9. Serve as a side or add beef etc to it to make it a complete meal.
Notes:
This recipe serves one person for a complete meal, but would serve about four adults as a side vegetable dish.
