Ingredients:
  • 1 cup coconut flakes
  • ¾ cup macadamia nuts
  • ½ cup walnuts
  • ½ cup goji berries
  • ½ cup raw cacao nibs
  • ½ teaspoon cinnamon
  • ½ cup pumpkin seeds
Method:
  1. Grab a large bowl to combine all the ingredients.
  2. You could add the coconut flakes as is, or you can roast them up. I went for the roasted option.
  3. I just cooked them in a non stick pan for a couple of minutes until they started to brown slightly. They are really delicious!
  4. I roasted the pumpkin seeds as well, they change shape slightly and have a lighter taste roasted I think.
  5. Add the coconut and pumpkin seeds to your bowl.
  6. Chop up the macadamias.
  7. Chop up the walnuts.
  8. Add the cacoa nibs. In chocolate manufacture, the cleaned broken pieces of the cotyledon of the cacao seed which remain after the roasting, crushing, and winnowing processes are referred to as Cacoa nibs. They are an antioxidant, a great source of magnesium and make you think you are having a chocolate treat!
  9. With all the ingredients in the bowl, add in the cinnamon.
  10. Stir around and then make up snack size portions.
  11. This trail mix recipe is the perfect snack when you are on the go. It takes a little time to pull this together, especially if you are roasting some of the ingredients, so I am going to double the ingredients next time I make this.
