Tomato and Coconut Soup

Ingredients:
  • 600 grams tomatoes
  • Olive oil spray
  • 1 lime
  • 200 mls coconut milk
  • ½ tsp curry powder
  • 200 mls water
  • salt and pepper to taste
Method:
  1. Preheat oven to 180°C. Slice tomatoes into four wedges each. Place onto trays lined with baking paper.
  2. Spray the tomatoes with a little olive oil and sprinkle with salt and pepper.
  3. Bake in the oven for about 30 minutes.
  4. While tomatoes are cooking, juice the lime and set aside.
  5. I made this soup in the Soup and Co. If you are too, simply add tomatoes, lime, coconut milk, water and curry powder to the Soup and Co. Select programme 1 and cook for 25 minutes. Serve and enjoy.
  6. Alternatively add add tomatoes, lime, coconut milk, water and curry powder to a medium pot. Bring to the boil, then reduce heat to a simmer for 15 minutes. Place batches of soup into a jug and puree the contents. Pour pureed mixture into a large bowl and begin pureeing another batch. Continue this process until all the mixture has been pureed and you are happy with the consistency of the soup.
