Gluten Free Caramel Slice

Ingredients:
Base
  • 1 cup gluten free plain flour
  • ½ cup brown sugar
  • ½ cup desiccated coconut
  • 125 grams butter, melted
Filling
  • 1 x 397 gram can condensed milk
  • 2 tablespoons butter
  • 2 tablespoons golden syrup
Topping
  • 200 grams chocolate
Method:
Base
  1. Preheat oven to 180⁰ Celsius and spray a baking/slice tray.
  2. Mix all base ingredients together until combined.
  3. Press into prepared tray.
  4. Bake for 20 minutes.
Filling
  1. Put all filling ingredients into a saucepan.
  2. Cook over low heat until all melted, stirring so mixture doesn't stick to bottom.
  3. Pour over cooked base.
  4. Bake further 15 minutes
  5. Take out and let go cold before adding topping.
Topping
  1. Melt chocolate over a double boiler or in microwave.
  2. Pour over cold filling.
  3. Chill in fridge.
  4. When slicing use a warm knife.
