Simple Quinoa Salad
- ¾ cup quinoa
- 1½ cups cold water
- 1 lemon
- 1 teaspoon extra virgin olive oil
- ⅓ cup flat leaf parsley
- 1 small Lebanese cucumber
- Salt and pepper
- Rinse quinoa thoroughly. I place it in a sieve and run it under cold water.
- Use a medium saucepan and add the quinoa and water.
- Cover and bring to the boil. Once boiling, reduce heat to low and allow to simmer for about 10 minutes.
- While the quinoa is cooking, peel, deseed and dice the cucumber. Chop parsley.
- Grate the skin of the lemon so you have 2 teaspoons of finely grated rind. Squeeze lemon so you have 1½ tablespoons of lemon juice.
- At the 10 minute mark, check quinoa. All water should be fully absorbed.
- Once quinoa is ready, return quinoa to the sieve and rinse again and drain.
- Place quinoa in a large bowl and add parsley and cucumber. Toss gently.
- Use a jar or other container with a lid and add lemon juice, lemon rind, oil and season with salt and pepper.
- Put lid on and shake well. Pour over quinoa and gently toss again and then serve.
