2 limes (or enough limes to make 3 teaspoons lime juice)
¼ cup fresh breadcrumbs
1 egg
5 tablespoons chilli jam
18 mini rolls
¼ lettuce
Method:
Preheat oven to 175 degrees celsius and line a baking tray with non-stick baking paper.
Juice limes and set aside.
Lightly beat egg and set aside.
Finely chop coriander and set aside.
In a large bowl add all ingredients and stir until well combined.
Use heaped tablespoons of the meat mixture and roll into a ball. Roll out a tray full of balls, then gently press them flat to make an even patty.
Place in the oven and bake for 25 minutes and then turn them over. Cook for a further 10-15 minutes or until browned.
Open the rolls and place them on a serving tray ready to fill.
Spread each roll with a small amount of chilli jam. Then once the hamburger is in the bun, top with another dollop of chilli jam and lettuce. Pin with a toothpick and serve! Makes 18.
