Pikelet Recipe - Vanilla Yogurt Edition

Ingredients:
  • 2 cups plain flour
  • 2 tablespoons caster sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 eggs
  • 2 cups vanilla yogurt
  • 50 mls milk
Method:
  1. In a medium sized bowl add flour, caster sugar, baking powder and baking soda and stir to combine.
  2. In a separate bowl whisk the eggs.
  3. Add the yogurt and whisk well.
  4. Add the yogurt mix to the dry ingredients and stir in.
  5. The mixture will be quite thick, so add the milk gradually until you get the consistency of batter that you prefer for pikelets (I used the full 50 mls).
  6. Add a small amount of butter to a frying pan on medium heat.
  7. When melted drop large spoonfuls of mixture into the pan, allowing room for spreading.
  8. When bubbles appear, turn the pikelets over.
  9. The pikelets take less time to cook on the second side. Using a spatula to lift the pikelet, check that the bottom side is golden, then remove from the pan.
  10. Pikelets are ready to enjoy! This batter made 15.
  11. You can store them in an airtight container in the fridge if you want to make up a batch for school lunches. This pikelet recipe is also suitable for freezing.
