White Chocolate Chip and Raspberry Cookies
- 125 grams butter
- ½ cup caster sugar
- ½ cup brown sugar, lightly packed
- ½ teaspoon vanilla extract
- 1 egg
- 1 ¾ cups self raising flour
- ½ teaspoon salt
- 1 cup white chocolate chips
- ½ cup frozen raspberries
- Preheat oven to 180 degrees Celsius.
- Roughly chop the choc chips and set aside.
- Chop up the butter and place it into a medium sized mixing bowl and add sugars and vanilla extract.
- Cream with an electric beater until light and fluffy.
- Lightly beat the egg and then add it to the mixture, beating again with the electric beater.
- Add sifted flour and salt.
- Add white chocolate chips. Roughly chop the frozen raspberries and add them too.
- Gently mix with a spoon.
- Shape tablespoons of mixture into balls and place on tray, leaving room for spreading.
- Bake for approx 10 minutes or until starting to turn golden.
- Allow to cool on tray and then move to a wire rack.
