White Chocolate Chip and Raspberry Cookies

Ingredients:
  • 125 grams butter
  • ½ cup caster sugar
  • ½ cup brown sugar, lightly packed
  • ½ teaspoon vanilla extract
  • 1 egg
  • 1 ¾ cups self raising flour
  • ½ teaspoon salt
  • 1 cup white chocolate chips
  • ½ cup frozen raspberries
Method:
  1. Preheat oven to 180 degrees Celsius.
  2. Roughly chop the choc chips and set aside.
  3. Chop up the butter and place it into a medium sized mixing bowl and add sugars and vanilla extract.
  4. Cream with an electric beater until light and fluffy.
  5. Lightly beat the egg and then add it to the mixture, beating again with the electric beater.
  6. Add sifted flour and salt.
  7. Add white chocolate chips. Roughly chop the frozen raspberries and add them too.
  8. Gently mix with a spoon.
  9. Shape tablespoons of mixture into balls and place on tray, leaving room for spreading.
  10. Bake for approx 10 minutes or until starting to turn golden.
  11. Allow to cool on tray and then move to a wire rack.
