Cut up lettuce, tomato, cucumber and capsicum. Grate carrot.
In a small bowl, mix sweet chilli sauce and soy sauce.
Heat oil in a large frying pan on a medium heat, add chicken and cook until browned.
Add the sauce mixture and coriander to the chicken and cook for another couple of minutes, until the sauce has heated all the way through and thickened slightly.
Heat wraps per their instructions, add chicken, salad and top with yogurt and enjoy.
If you cook up four chicken breasts you have plenty of meat left over for lunches. The kids had cold wraps in their lunch boxes the next day at school and just loved them!
