Cookie Dough Truffles

Ingredients:
  • 2½ cups plain flour
  • 1 teaspoon salt
  • ¼ teaspoon baking powder
  • 226 grams butter
  • ¾ cup caster sugar
  • ¾ cup packed brown sugar
  • 1 teaspoon vanilla essence
  • ⅓ cup milk
  • 1 cup choc chips
Chocolate Coating
  • 250 grams dark chocolate
  • 30 grams butter
Method:
  1. While not hard to make, these Cookie Dough Truffles do take some time. Time to make and time in between while you wait for things to chill, set etc, so if you are going to make them, I recommend making them on a day when you will be just pottering around at home.
  2. Chop butter and add it to the sugars in a large bowl.
  3. Using an electric mixer beat until the mixture is light and fluffy.
  4. Add the milk and vanilla and give a quick beat to combine.
  5. Add flour, salt and baking powder to the mixture. Blend in using a wooden spoon.
  6. Add the choc chips and mix into the dough. Place dough in the fridge to chill for an hour. COVER the dough - I forgot to and I think it made a difference.
  7. Roll the dough into balls and place on a tray lined with baking paper.
  8. In the original recipe Lindsay used dark chocolate candy coating, I didn't have any of that so went with a combo of dark chocolate melted with a little bit of butter. The butter makes the chocolate thinner and a bit shinier.
  9. I melted the chocolate in the microwave. Break choc into small pieces, add chopped butter.
  10. Make sure you use a bowl that won't get hot easily as the choc doesn't melt very well then. And don't make the bowl too wide. You want to be able to dip the cookie dough balls into the chocolate, so having some depth to the melted choc works well.
  11. Heat on high for about a minute, then stir well, so butter is combined with the chocolate. Melt for another 30 - 45 seconds so the chocolate is completely melted.
  12. The recipe recommended using a dipping tool, which we don't have, so we used toothpicks to dip the cookie dough balls into the chocolate.
  13. We then placed the toothpicks into a block of polystyrene so they could set easily.
  14. It was then into the fridge for an hour to set.
  15. As these were going to be gifts, I wrapped them in groups of 5 in clear cellophane and tied the ends with string.
  16. Makes about 40 cookie dough truffles.
