How To Make Caramel Popcorn

Ingredients:
  • ½ cup popping corn
  • 125 grams butter
  • ¾ cup caster sugar
  • 2 tablespoons honey
  • 1 cup pecans
Method:
  1. Cook your popcorn in your usual way. We have an air popper which makes this so easy. Make sure you remove any kernels that haven't popped - they aren't fun to crunch on in the middle of a piece of caramel popcorn.
  2. 
Chop the butter. In a saucepan add the butter, honey and caster sugar.
  3. 
On a medium heat, melt the ingredients, stirring continuously. Keep on low heat and stir until sugar is dissolved - about 5 minutes.

Once sugar is dissolved, bring the mixture to the boil and let it boil without stirring until it is light golden in colour.

While the mixture is boiling, chop the pecans and line your dish with baking paper. I used a lasagne dish.

Remove from the heat and stir in the pecans.
  7. 
Mix the the carmel mixture into the popcorn. Stir through and work quickly as the caramel starts to set pretty quickly. Once the mixture is well combined, pour it into lined dish and pat down so it is even.
  8. 
Let is set for about an hour. Then remove from the dish by pulling the baking paper up. Cut into pieces and serve to very happy children!
