Ingredients:
  • 600g firm white fish fillets, skin removed (like flathead)
  • ½ cup plain flour
  • 2 tbs finely chopped flat leaf parsley
  • 1 tbs sesame seeds
  • 1½ cups dried breadcrumbs
  • 2 eggs, lightly beaten
  • Olive oil cooking spray
  • 1 tbs low fat greek-style yoghurt
  • ¼ cup hummus dip
  • 4 long crusty wholegrain bread rolls, halved
  • Mixed salad leaves
  • 1 small avocado diced
  • 1 Lebanese cucumber, diced
Method:
  1. Place a flat tray into the oven; preheat the oven and tray to 210°C fan
  2. forced.
  3. Meanwhile, cut fish into long 2.5cm thick strips. Place the flour on a plate,
  4. combine breadcrumbs, parsley and sesame seeds on separate plate and beat
  5. eggs with 1 tablespoon of cold water in a shallow dish.
  6. Dip fish one piece at a time into flour, egg, then breadcrumb mixture,
  7. pressing on it gently with your finger tips. Then dip the fish in the egg and
  8. breadcrumb mixture again. Spray both sides of the fish lightly with oil.
  9. Remove the hot tray from the oven and lightly grease. Add the fish and bake
  10. for 15-20 minutes, turning the fish over after 10 minutes or until fish is golden
  11. and cooked through.
  12. Stir the low-fat yoghurt into the hummus then spread over the base of each
  13. roll. Top with salad leaves, avocado, cucumber and fish and serve.
  14. Shopping tip: When buying fish, ask the fishmonger to remove the skin from
  15. the fish for you. Other fish suitable for this recipe are barramundi, salmon and
  16. red fish.
  17. Serves 4.
