Chocolate Snowballs
- 1 cup flour
- 1 cup caster sugar
- ½ cup cocoa
- ½ tsp baking powder
- ½ tsp salt
- 75 grams butter
- 2 eggs
- ½ tsp vanilla essence
- ½ cup icing sugar
- The recipe did say this could be made using a food processor. I don't own one, so went with the old school hand made method.
- Preheat oven to 180 degrees Celsius.
- Into a medium bowl, sift flour, sugar, cocoa, salt and baking powder.
- Chop butter into cubes and add to the bowl.
- Using the tips of your fingers, rub the butter into the dry ingredients. Keep rubbing the butter in until you have a light crumbly mixture.
- Beat one egg lightly, then add it to the mixture, combine well.
- Add next lightly beaten egg and combine.
- Add vanilla and combine.
- Place mixture in the fridge for approx an hour. This makes the dough so much easier to use.
- Sift icing sugar into a small bowl.
- Roll dough into small balls and then toss in the icing sugar.
- Place the balls on a lined tray and allow room for spreading.
- Bake for 10 minutes.
- Allow to cool for at least 5 minutes on trays before moving to racks to cool further.
- Makes approx 40.
