Easy Rice Paper Rolls (that are kid friendly!)

Ingredients:
  • 250gms shaved ham
  • 2 red capsicums
  • 4 large carrots
  • ¾ medium iceburg lettuce leaves
  • 24 small rice paper wrappers (found in Asian section at most supermarkets)
Dipping sauce
  • 4 tablespoons tomato sauce
  • 2 tablespoon barbecue sauce
  • 2 teaspoon soy sauce
  • 2 teaspoon honey
Method:
  1. Grate carrot, tear lettuce and cut capsicum into fine strips as shown above in photo.
  2. Grab a bowl large enough to place your rice paper sheets into flat. Half fill it with warm water. (If you are making lots like we did, you need to make sure the water is refreshed so it stays warm.)
  3. On the kitchen bench, place a clean and dry tea towel to use as your work space. Dip a rice paper into the water and make sure it is fully submerged. Let it soak for 10 to 20 seconds (no more). The rice paper will soften further once it is out of the water. Drip off excess water and then place on tea towel to fill with ingredients.
  4. I let the kids choose the fillings as they made the rice paper rolls. All of them with the exception of one added everything. The 4 year old only wanted ham and lettuce. We placed the ingredients towards one edge and made sure to leave room at the top and bottom. It is important not to let the kids stuff too much in other wise the rice paper does split (we learnt that too!). Fold in each end and then roll the rice paper up.
  5. Place the rice paper rolls on to a platter with the seam on the bottom. If you aren't eating them straight away, wet another clean tea towel, wring out excess water and cover the plate. We kept ours in the fridge covered with the tea towel for an hour or so before we left for our lunch and they didn't dry out at all.
  6. As we were taking the rice paper rolls out with us, to make dipping sauce, I placed all the ingredients into a clean jar added the lid, shook vigorously and the dipping sauce was ready to go. We made 24 rice paper rolls from these ingredients.
