Today I am excited to share a fab family friendly recipe from Urban Forager – Easy Chicken Fajitas. Urban Forager are based in Fremantle WA and make organic stock concentrates from 100% pure ingredients. I will share more about Urban Forager after the recipe and give you a chance to win some of their amazing products!

This meal is a perfect self serve meal for kids. If you have fussy eaters, self serve meals can work really well as kids get to choose what they put on their plate and the quantity. You can see a range of self serve meals for kids here.

Easy Chicken Fajitas

Ingredients
  

  • 2 chicken breasts cut into strips
  • 1 red capsicum pepper, cut into thin strips
  • 1 red (spanish) onion halved and cut into thin strips
  • 2 tspn cumin seeds
  • 2 tspn smoked paprika
  • 1 lime juiced
  • 1 Tbspn olive oil
  • 1 tspn Urban Forager Chicken Stock Concentrate
  • oil extra
  • lime extra

To Serve

  • Guacamole (see our amazing recipe)
  • Sour cream
  • lettuce & spinach leaves
  • fresh coriander
  • kidney beans
  • grated carrot
  • corn tortillas or wraps

Instructions
 

  • Combine chicken, capsicum, onion, spices, lime juice, oil and stock concentrate in a glass or ceramic dish
  • Mix to combine
  • Marinate for 20 mins on the bench if pressed for time or overnight in the fridge – the longer the better
  • Heat a heavy based fry pan to medium-high heat
  • Add extra oil for frying
  • Stir fry in batches ’till chicken is cooked. Serve in the hot pan to keep the mix hot
  • Add a squeeze of lime just before serving for added zing

Urban Forager Organic Stock Concentrates are made from 100% pure ingredients – natural, healthy vegetables, herbs, meat, spices, cider vinegar, olive oil & salt. They are made in Fremantle, Western Australia and work hard to source ingredients as close to Fremantle as they can.

The apple cider vinegar used is raw unfiltered vinegar from Pemberton; the grassfed organic beef comes from Mumballup; the olive oil is from GinGin; and they use vegetables from the Gasgoyne and South West of WA when we can. Organic chicken has been difficult to source in WA so they use Inglewood free range, organic chicken from Queensland.

The Urban Forager products are fantastic value for money and with glass packaging, it is much more sustainable than the traditional liquid stocks. From this one little jar you can make up to 10 litres of full flavoured stock and you have plenty of time to use it as the concentrate can be stored in the fridge for up to 12 months.

I have been loving these stocks! I love how it is easy to get just the amount of stock you want without wastage and the flavor is amazing. I also love that the ingredient list is so pure – it would be what I would use to make my own stock if I did!

The Urban Forager Beef Stock went perfectly with my slow cooker beef stroganoff.

Adding a teaspoon to my pumpkin soup was a really lovely flavour addition.

And the veggie stock has been great when making cous cous to give it a flavour boost.
