I was inspired to make this little creation due to seeing so many Ferrero Rocher chocolates about this time of year!
As with most raw wholefood treats, they are super easy to make and taste delicious!
The surprise element comes from finding a whole (skinless) hazelnut in the middle!
They of course don’t taste quite the same as a Ferroro Rocher, but it is a great healthy substitute!
- 1 cup hazelnut meal
- 1 cup cashews
- 2 cup pitted dates
- 2 tsp vanilla extract
- 2 tbsp cacao powder
- Pinch of sea salt
- 24 whole hazelnuts (skinless)
- Add all ingredients to the food processor except the whole hazelnuts and pulse until it forms a dough like consistency. You should be to squeeze the dough easily to form a ball which stays together well.
- Using a heaped tablespoon of mixture make into balls. Push your finger into the ball, pop in the whole hazelnut then reshape the ball.
- Place in an airtight container in the fridge and let set for 2 hours.
