These nut butter cups were inspired by the Reese’s peanut butter cups, I saw in the supermarket recently. I use some different nut combinations this recipe – ABC butter and hazelnut meal to mix things up a little from what I usually use and they taste amazing. You could play with the type of nut ingredients you use to come up with a combo just for you.
Below the recipe I have included my monthly menu plan. When the kids’ requests came through for the menu plan there were many double ups – the kids tend to be preferring their favourites more consistently at the moment.
I have some significant deadlines coming up over the next month, so decided to save myself time now by creating a fortnightly plan and repeating it and save time later also by just sticking to the kids’ favourites which also happen to be easy to make and work well for left over potential for lunches.
To me this is the absolutely beauty of menu planning; you can use it to suit your family life and pace, varying it as needed.
Nut butter cups
I used cut squares of baking paper as I find sometimes they can stick a little in patty pans.
When making the base, you can test if it is ready when it forms in to a ball easily.
You don’t need to set the base before you add the top layer.
The chocolate layer will soften if left at room temperature too long, so make sure you store them in the fridge or freezer.
- 1 ¼ cup hazelnut meal
- 4 tbsp ABC butter (or other nut butter)
- 1 ½ tbsp coconut oil (melted)
- 1 tbsp maple syrup
- ¼ tsp cinnamon
- ¼ tsp vanilla extract
- ⅛ tsp pink Himalayan salt
- 5 tbsp coconut oil (melted)
- 3 tbsp maple syrup
- 4 tbsp cacao powder
- ¼ tsp vanilla extract
- pinch Himalayan pink salt
- To the food processor add hazelnut meal, ABC butter, coconut oil, maple syrup, cinnamon, vanilla and salt.
- Process for 1 - 2 minutes or until it turns into a sticky dough.
- Line muffin tins with either patty pans or baking paper and spoon a tablespoon of mixture into each one.
- Press down so they will make a smooth circular shape.
- To make the chocolate topping add the coconut oil, maple syrup, cacao powder, vanilla and salt to a small bowl.
- Whisk the ingredients together until well combined, then spoon approximately 1.5 teaspoons of chocolate topping on to the bases.
- Place in the freezer to set for an hour.
- Take them out of the paper liners and enjoy!
- They keep best stored in the fridge.
