I am loving this banana bread! It tastes amazing and as well as being gluten free it is also cane sugar free. I have played around with the amount of banana the bread has. Two will give you a drier type of bread, three is incredibly moist and two and a half seems just about right. It will very much depend on the size of your bananas though, so keep that in mind.
Gluten Free Banana Bread
Ingredients:
- 2 ½ large bananas
- 3 eggs
- 3 tbsp maple syrup
- 2 tbsp coconut cream
- 3 tbsp macadamia oil
- 1 ½ cup almond meal
- 2 tbsp desiccated coconut
- 3 tbsp coconut flour
- 1 tsp cinnamon
- ¾ tsp gluten free baking powder
- 3 tbsp walnuts
Method:
1. Preheat oven to 160 degrees Celsius.
2. Break up banana into chunks in a large bowl. Mash bananas with a masher or use a stick blender. The riper the bananas the better!
3. Lightly beat eggs. Add maple syrup, coconut cream and macadamia oil to the eggs and mix.
4. Add egg mixture to bananas and mix well.
5. Add to this the almond flour, desiccated coconut, coconut flour, cinnamon, baking powder and mix gently with a spoon until combined.
6. Chop walnuts and toss them in, mix gently again.
7. Pour into a loaf tin, lined with baking paper. The bread mixture is more runny than what you are probably used to, but go with it as it does firm up.
8. Bake for 40 minutes. If the skewer comes out clean it is ready.
9. Let the bread sit in the tin for about 10 minutes before removing.
10. Then remove to a rack and allow to completely cool before cutting.
It tastes incredibly delicious toasted lightly under a grill and then buttered!
Make your own almond flour
I ran out of almond flour when making this, so I made my own!
Ingredients:
- 2 cups slivered almonds
Method:
Add almonds to a bowl with cover if you don’t have a food processor and blend.
Keep blending until all chunks are finely ground and you have turned the almonds into a flour consistency.
This makes 2.5 cups almond flour.
