Slow Cooker Mexican Style

This recipe is in some ways just a slow cooker version of one of the most popular recipes on the blog – Mexibake. The bonus is that I can quickly whip it up in the morning and it is ready when we get home from after school activities.

Slow Cooker Mexican Style

Ingredients:

  • 500 grams beef mince (ground beef)
  • 1 onion
  • 1 red capsicum
  • 1 green capsicum
  • 2 carrots
  • olive oil
  • 410 grams diced tomatoes
  • 1 packet Taco Seasoning Mix
  • 500 mls pasta sauce
  • 2 cups grated tasty cheese
  • 2 cups grated mozzarella cheese
  • 5 tortillas

Method:

1. Grate carrot, chop capsicums and onions.

2. Heat oil in large frying pan. Once at a medium heat fry onion for a few minutes until soft.

3. Add meat to the pan and brown meat, ensuring that it is completely broken up.

4. Once meat is cooked, stir in capsicums and carrot. Cook for few minutes until temperature has reached medium again.

5. Add tomatoes and stir well.

6. Add pasta sauce and stir well.

7. Add taco seasoning and mix well. Let simmer for about 15 minutes.

8. In the slow cooker add about a quarter of the meat mixture.

9. Place tortilla on top.

10. Mix the cheeses together and sprinkle over the tortilla.

11. Repeat starting with the beef mixture until you have used up all of the meat mixture.

12. Cook on high for 3 – 4 hours or low for 7 – 8 hours.

13. Cut the slow cooker Mexican into wedges.

14. Serve with salad and enjoy!
