Sugar Coated Peanuts

I was really looking for a recipe to make what we used to call Vanilla Peanuts. You know those reddy coloured sugar coated peanuts? As a kid we would have them every Christmas and loved them. I still quite like them even though I know they are a peanut simply encrusted in sugar!

I couldn’t find a recipe for that, but blended a few recipe I found to make these sugar coated peanuts. They are pretty close to what I was after and did taste great, but if you know of the recipe I was talking about, I would love it if you left a note in the comments!

Sugar Coated Peanuts

Ingredients:

  • 1 cup of white sugar
  • 2 cups of peanuts
  • 1 tsp vanilla essence
  • 1/2 cup water

Method:
Preheat oven to 150 degrees Celsius.

In a medium size saucepan add the sugar, vanilla and water.

On a medium heat, dissolve the sugar until the liquid is clear.

Add peanuts in small batches, stirring as you go until they are all added.

Keep stirring and cooking for about 5-7 minutes or until there is only minimal liquid remaining.

Line a tray with baking paper and pour the mixture on to it.

Spread out the peanuts across the tray, using a fork.

Place in oven for 30 minutes. Set a timer for 10 minute intervals and stir up the peanut mix each time. This helps the peanuts bake more evenly. This is what they looked like the first time I turned them.

Break up any clumps of peanuts if needed with a fork.

You can serve them warm or place in an air tight container once cooled to serve later.
