Part of the cooking fiesta I have been on this week to stock the freezer for my absence, was making cookie dough to freeze, so the kids could still have a home made treat in their school lunch boxes. Freezing cookie dough is also great way to be able to whip up something quickly if friends drop in.
I used a very simple recipe that makes 100 cookies! I have posted it before on the blog, but have included the recipe below as well.
How To Freeze Cookie Dough
Ingredients:
- 500gms butter
- 1 tin condensed milk
- 1 cup caster sugar
- 5 cups self-raising flour
Optional ingredients to add to dough:
- Hundreds and Thousands
- Choc Chips
- Coconut
- Strawberry Jam
Instructions:
Preheat oven to 180 degrees Celsius.
Cream sugar and butter (as the kids were making them, I soften the butter for about 15 – 20 seconds in the microwave) in a large bowl.
Add condensed milk and flour and mix with a large spoon.
Once mixed then use your hands to mould the mixture into a large smooth ball.
Cut the dough into 3 (or how many pieces you would like) so you can vary what you add to the cookie dough.
Add your chosen additional ingredient, in this case 100s and 1000s to one batch of dough and mix it in.
We wanted to cook one batch then and there so we used teaspoon sized balls and place on a tray lined with baking paper.
Baked for about 10 – 15 minutes or until golden brown. The biscuits will harden once they cool.
With one of the other dough chunks we added white choc chips and rolled it out into a long sausage on a piece of baking paper.
We then twisted the ends and placed it into the freezer.
With the last batch of dough we added milk choc chips, rolled it into a long sausage on baking paper.
And twisted the ends of the baking paper and placed the cookie dough in the freezer.
When I am away Mr I, can just retrieve a batch of dough from the freezer. Cut 1cm slices of the dough, place them on lined baking trays and add to a preheated oven for 10 minutes. Fresh cookies in no time!
