Chocolate Snowballs

This recipe comes from a cook book my kids school sold as a fundraiser a couple of years ago, it has some pretty amazing recipes in it. This was the first time I had cooked the Chocolate Snow Ball recipe – they are so delicious.

I had made then on a Sunday to be the treat for the kids lunch boxes, but I won’t make them for the kids lunches again. The kids LOVED them, but they are quite sweet and small, so much better suited to an afternoon tea with friends!

Chocolate Snowballs

Ingredients:

  • 1 cup flour
  • 1 cup caster sugar
  • 1/2 cup cocoa
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 75 grams butter
  • 2 eggs
  • 1/2 tsp vanilla essence
  • 1/2 cup icing sugar

Chocolate Snowballs
The recipe did say this recipe could be made using a food processor. I don’t own one, so went with the old school hand made method.

  1. Preheat oven to 180 degrees Celsius.
  2. Into a medium bowl, sift flour, sugar, cocoa, salt and baking powder.
  3. Chop butter into cubes and add to the bowl.
  4. Using the tips of your fingers, rub the butter into the dry ingredients. Keep rubbing the butter in until you have a light crumbly mixture.
  5. Beat one egg lightly, then add it to the mixture, combine well.
  6. Add next lightly beaten egg and combine.
  7. Add vanilla and combine.
  8. Place mixture in the fridge for approx an hour. This makes the dough so much easier to use.
  9. Sift icing sugar into a small bowl.
  10. Roll dough into small balls and then toss in the icing sugar.
  11. Place the balls on a lined tray and allow room for spreading.
  12. Bake for 10 minutes.
  13. Allow to cool for at least 5 minutes on trays before moving to racks to cool further.
  14. Makes approx 40.
