Zucchini Slice

Zucchini slice was definitely the meal of the week last week. My children love this meal. It is a very easy recipe to cook, but I find that I have to make so much of it, to feed us all! The original recipe I based this on only used half the ingredients and stated that it would serve 4 to 6 people. This must have been for a snack only, because that amount only feeds 3 of my kids.

Zucchini Slice Recipe

This recipe makes two dishes (approx size 16cm x 26cm) of the slice.

Ingredients:

  • 750 grams zucchini
  • 2 large onions
  • 8 rash shortcut rindless bacon
  • 2 cups self raising flour
  • 2 cups grated cheese
  • 10 eggs
  • 1 cup vegetable oil
  • salt and pepper to taste

Instructions:

  1. Preheat oven to 180 degrees Celsius.
  2. Grate unpeeled zucchini.
  3. Finely chop bacon and onion.
  4. Lightly beat eggs.
  5. In a large mixing bowl, combine zucchini, onion, bacon, cheese, sifted flour, oil and eggs. Add salt and pepper if you like.
  6. Mix well, then pour into large well greased dishes (I use a lasagne dish).
  7. Bake in oven for about 40 minutes. Slice should be brown on top, but cooked through. Use a skewer to check. If it comes out clean, slice is ready.

Easy Zucchini Slice Muffins
I actually made a batch of the slice and cooked them in patty pans. (This meant that I used a total of 15 eggs!!!) They looked great when they came out, but when the kids tried to eat them, quite a bit of the slice was left behind on the bottom of the patty pan. However they were not a complete disaster. The aim had been to make them for the kids lunches at school. When I was packing them I thought I would try again and peel the patty pan off and they come off quite easily when they are cold.
