Spaghetti Omelette and The Family Menu Plan

spaghetti-omeletteA new blog that I have started reading Gourmet Worrier posted recently Froġa tal- għaġin – Spaghetti Omelette. You really should go to Ms Gourmet’s blog and check out her photos of this dish. They look fantastic, unlike mine – but at least you get the idea from the photos about what I was cooking! 🙂

This was a very easy and quick recipe to cook. We had it for lunch, but it would be perfect for me to throw together with a few more ingredients for dinner after the boy’s football training one night.

I doubled the ingredients to cater for my large brood, which worked fine, with the exception of turning it over. It was too heavy to do all at once, so I had to cut it in half and then flip each section. I managed to blend it back together though and remove it whole from the pan which I was pretty happy with.

I also used Parmesan cheese as I didn’t have any grana padano on hand and I think that worked well. All the kids ate it and I was happy to cook something new. It was the first new recipe that I have tried all year!
