Menu Plan Monday - The Benefits Of Pre-Planning

Before I started the 30 Day Challenge in August, I went ahead and did a family meal plan for the month. It was great to get to Sunday and know what that I just had to access the file and it was all sitting there ready for me.

During the September school holidays I decided to plan for a month again. So with the children’s input, I did the same thing with October. Now as I write this late Sunday night after 2 children’s birthday parties, 2 junior cricket games, a Christening and BBQ and a working bee, I was completely releived that I weekly menu plan for the family already completed and here it is:

Monday: Shepherd’s Pie

Baking: Pikelets

Tuesday: Tuna Rice

Wednesday: Chicken Schnitzel and Salad

Thursday: Pasta with Chicken and Spinach

Friday: Left Overs

Saturday: Chicken Stir Fry With Seasonal Vegetables

Sunday: Sausages and Vegetables

Menu Plan Monday - Brevity

We have had an amazing last few days. Mr I and myself went away for a couple of days WITHOUT the children and then yesterday Mr I, was able to tick off a “must do this in my life time” achievement when he completed the Melbourne Marathon!

With all this activity this has been my first time on the computer since Thursday lunch time and although it was nice to have a technology break, it does mean that I have loads to catch up on! So I will just get straight to the plan for this week:

Monday: Mexibake

Baking: White Chocolate Chip Muffins

Tuesday: Left Overs

Wednesday: Chicken Korma

Thursday: Lasagna

Friday: Souvalakis

Saturday: Pasta with Chicken and Spinach

Sunday: Roast Chicken and Vegetables

Menu Plan Monday - Seasonal Fruit And Vegetables For October

1. Strawberries, 2. Mangoes, 3. grapefruit, 4. Abacaxi, piña, pineapple

As we head further into spring some of my children’s favourite fruits are starting to come into season - strawberries and mangoes. The mangoes are still on the more expensive end at the market, so it will be a few weeks before we start buying them in multiple amounts.

The following fruits and vegetables listed below are at their best and cheapest this month. These lists are for Australia, but if you live in the UK you can see what’s in season at Eat the Seasons UK and for North America Eat the Seasons US.

Fruits:
berries - strawberry, cumquat, grapefruit - pink - yellow, lemon, loquat, mango, orange - valencia, papaya, pawpaw, Pineapples - smooth - rough leaf, starfruit.

Vegetables:
artichoke, asian greens - bok choy - choy sum - gai laan - wonga bok, asparagus -green - white - purple, avocados - fuerte - hass - sharwill, beans - broad - green, broccoli, choko, cucumber, garlic, lettuce, onions - salad - spring, peas, silverbeet, spinach, watercress.

Now on to the plan!

Monday: Chicken Stir Fry With Seasonal Vegetables

Baking: Chocolate Balls

Tuesday: Fried Rice

Wednesday: Chicken Lasagne

Thursday: Grilled Fish with Asian Greens

Friday: Left Overs

Saturday: Marinated Chicken Wings with Baked Potatoes and Corn

Sunday: Sausages and Salad

Menu Plan Monday - Taking It Easy


Before baking 1 by jslander.

We have two week school holidays now, which both myself and the children have been looking forward to. As such I am planning on enjoying the slower pace and will be keeping the food simple, choosing meals which require minimum effort!

Monday: Baked Penne With Bacon

Baking: 100s Of Biscuits
Fantastic recipe which I picked up from Kate at Picklebums. Baking these with the kids also doubles as a great school holiday activity as well.

Tuesday: Beef Stir Fry with Asian Greens

Wednesday: Grilled Fish and Steamed Vegetables

Thursday: Spicy Chutney Chicken with Mixed Rice

Friday: Homemade Pizza

Saturday: Mexibake

Sunday: Lamb Chops and Salad

Menu Plan Monday - Keeping It Simple

I am in week three into the 30 Day Challenge now and feeling a little tired. This combined with having visitors staying for Mon and Tue night (family of six) means that I will be keeping things very simple this week to try and make my life a little less busy.

Monday: Fettuccine Carbonara, Baked Penne With Bacon and Spaghetti Bolognaise.
As well as our visitors, we are having another family for dinner as well. I will be able to make most of these fully or wholly in advance, so hopefully I will enjoy some of the dinner myself.

Baking: White Chocolate Chip Muffins

Tuesday: Fried Rice and Chicken Wings

Wednesday:Beef Curry

Thursday: Porcupine Meatballs (Carried over from last week.)

Friday: Left Overs

Saturday: Nachos

Sunday: Sausage and Seasonal Vegetables

Menu Plan Monday - Unplanned Purchases

One of the reasons why I love to menu plan is that it really helps to limit the unplanned purchases that occur at the supermarket, compared to when I go without a planned comprehensive list. There always seem to be items jumping out and calling me to buy them. If I have my list though, I tend to stick to it and whiz around the aisles quite quickly.

It then didn’t surprise me when I was reading the Good Weekend Magazine from The Age on the weekend, and I came across the fact that comparing the percentage of planned vs unplanned purchases is often used by companies to measure their success.

In supermarkets, for example, 70 to 75 per cent of the money spent involves an unplanned purchase,

Areni made this point in an article on Ikea titled “Out Of The Box” where he also comments:

That’s why Ikea’s laid out as it is. Most retailers will say, “The longer I can keep somebody in my store and the more merchandise I can get them to walk by, the more money I can make per customer.”

I am going to remember this next time I wheel my trolley past a brightly set up promotional display at the end of the aisle, and ask myself the questions “Is it on my list? Do I really need this or is it the retailer just trying to nab another unplanned purchase from me?”

Menu Plan Monday - Seasonal Fruit and Vegetables for May

It is the start of a new month, so time to receive some inspiration for meals by which vegetables and fruit are in season.

The following fruits and vegetables listed below are at their best and cheapest this month in Victoria, Australia. These lists are for Australia, but if you live in the UK you can see what’s in season at Eat the Seasons UK and for North America Eat the Seasons US.

Fruits:
Apple, Banana, Grapefruit, Grapes, Kiwifruit, Watermelon, Figs, Lemon, Persimmons

Vegetables:
Beanshoots, Broccoli, Carrot, Cauliflower, Mushrooms, Potato, Pumpkin, Spring onion, Turnip

Taking inspiration from the vegetables in season, there will be a few soups and casseroles over the month of May! We also had the opportunity to buy locally grown pumpkins cheaply when we were in Mildura, which is always a bonus!

Monday: Spaghetti Bolognaise
Baking: Lemon Slice (Recipe Below)

Tuesday: Pumpkin Soup

Wednesday: Chicken Schnitzel and Vegetables

Thursday: Beef Stroganoff (Recipe Below)

Friday: Chicken Wings, Baked Potatoes and Corn on the cob

Saturday: Left Overs

Sunday: Tacos

Again, I have included the shopping list for this week’s menu plan as an excel file. The below paragraphs explain what is in the attached excel file below.

It contains three separate spreadsheets. The first is named “Complete Grocery’ and it lists by supermarket aisle all the ingredients that are needed to cook the family meals for this week.

The second spreadsheet is named “Ingredient By Meal’ and it lists the ingredients that are required for the family by each individual meal this week. I have also left on the aisle and aisle subsection in this spreadsheet for reference, but if you want to print that out you will need to alter the print area.

The third spreadsheet is named “Menu Plan” and is a modified version of the menu plan that I print and place on the fridge. I have a notes section, that I like to populate with any activities that are likely to impact the evening meal routine.

Beef Stroganoff (Slow Cooker Version)

Ingredients:
500 grams diced beef
2 tablespoons plain flour
2 tablespoons olive oil
1.5 teaspoons minced garlic
2 large potatoes, cubed 1cm x 1cm
3 large carrots, sliced thinly
1 cup beef stock
3 tablespoons tomato paste
300 mls sour cream

Instructions:

    (1). Toss the meat in flour. If the meat is in a plastic bag, I just add the flour to the bag and shake with some vigour.
    (2). Heat oil in frying pan and brown the meat.
    (3). Once browned, transfer meat to the slow cooker and then add all ingredients with the exception of the sour cream.
    (4). Place lid on and cook on Auto/Low for 8-10 hours or High for 4-5 hours.
    In the last 30 minutes add sour cream and stir in thoroughly.
    (5). Serve with rice or pasta.

Lemon Slice

There are many variations on how to make a lemon slice, but this is a very easy to make, child friendly recipe that I use.

Ingredients:
BASE
100 grams butter
approx ¾ can of condensed milk (this equates to 296.25 grams to be precise!)
1 teaspoon grated lemon rind
1 cup coconut
1 packet Marie biscuits

ICING
1 ½ cups icing sugar
¾ cup coconut
3 tablespoons lemon juice

Instructions:

    1. Crush biscuits until they are like a breadcrumb consistency. I put them in a plastic bag and crush using the wooden rolling pin and then pour into a medium sized bowl.
    2. Add coconut, and lemon rind to the biscuit mix.
    3. On a low heat melt butter and condensed milk.
    4. Pour the milk and butter into the biscuit mix.
    5. Press this mixture into a lined baking tray.
    6. Place into fridge for appox an hour (when in a jury, I have put it in the freezer for 15 minutes and this has also worked).
    7. To make the icing, mix all the ingredients together and then spread onto the set biscuit base. Refrigerate again until the icing has set.
    8. Once set cut the slice into fingers. Lemon slices keeps best in the fridge.
