Sautéed baby spinach


sauteed baby spinach.jpgImproving my diet is a continuing effort. It isn’t just about not eating certain types of foods, but making sure I am getting a great mix of macro and micro nutrients.

I have never been fantastic at eating my greens, but I have been working on it and it has improved. I have kale in my morning smoothie and this green veggie recipe is a regular at dinner time.

Sautéed baby spinach is my latest recipe to help me eat more leafy greens and I love this sautéed baby spinach because not only does it taste great, but it is super quick to prepare. It can be added as a side to so many meals to bump up the nutritional intake:

Sautéed baby spinach

Recipe type: Vegetarian
Serves: 1
  • 120 grams baby spinach
  • 1 tbsp coconut oil
  • 1 clove garlic
  • ½ tsp pink Himalayan salt
  1. Heat oil in a large frying pan on medium high.
  2. Crush garlic and fry for 1 - 2 minutes stirring constantly.
  3. Add baby spinach and cook for 3 - 4 minutes stirring constantly. Add salt while cooking.
  4. Remove from heat and serve immediately.
