Anzac Biscuits

Serves: 12 large or 20 small biscuits

  1. Preheat the oven to 160°C.
  2. Blitz oats in blender or food processor for approximately 10 secs, it should look like a mix of flour and roughly chopped oats. Mix oats in a medium sized bowl with coconut, vanilla and salt until well combined.
  3. In a separate bowl, mix the Rice Malt Syrup, coconut oil and Coco Quench. Pour the wet ingredients into the dry and, using your hands, bring the mixture together until well combined - it should be wet but workable.
  4. Using your hands, shape the mixture into balls and place on a lined baking tray with about an inch between each ball. Dip a fork in warm water and gently flatten each ball into a biscuit.
  5. Bake in the oven for 10-15 mins, or until lightly golden. Allow to cool on a wire rack and enjoy.
