Coconut Macaroons with Chocolate!

Ingredients:
  • 2 eggs
  • ½ cup caster sugar
  • 100 grams milk chocolate
  • 2 cups coconut shredded
Method:
  1. Preheat fan forced oven to 130 degrees Celsius (150 for non fan forced).
  2. Line a couple of trays with baking paper.
  3. Over a large bowl, separate the egg and leave the whites in the bowl.
  4. Using a hand beater mix until the eggs whites become stiff and peaky.
  5. Gradually pour in sugar and beat further (our toddler poured ¾ of sugar in at once and it still turned out ok!).
  6. Keep beating until the egg mixture is glossy and firm.
  7. Using half the chocolate, finely grate it and then add to the egg mix with the coconut.
  8. Fold through gently with a metal spoon.
  9. Using teaspoons, place round heaps of the mixture onto the baking trays. They will spread so make sure you leave some room.
  10. Bake for 12 - 15 minutes until the coconut macaroons turn a pale golden shade and are firm to touch.
  11. Let the macaroons cool on the trays.
  12. In a small microwave safe bowl, melt the other half of the chocolate in the microwave. Start on high for 45 seconds, and give bursts of 15 seconds until it is melted.
  13. Using a teaspoon, drizzle chocolate over the macaroons.
  14. Allow the chocolate to set or if you are an impatient toddler you can eat them straight away!
