They went down a treat with both the kids and the adults. I think most adults secretly love a bit of old school party food!

Honey Joys Recipe

Ingredients:

180g butter or margarine

2/3 cup caster sugar

2 tablespoon honey

8 cups Corn Flakes

(makes about 40)

Method:
1. Preheat oven to 150°C.

2. Line about 40 muffin tins with patty pans and measure out corn flakes into a large bowl.

3. In a medium saucepan, melt butter, sugar and honey together.

4. Remove from heat once it starts to bubble slightly.

5. Pour butter mixture onto corn flakes and mix well.

6. Spoon the mixture into patty pans. The mixture hardens quite quickly, so you need to work with a bit of speed.

7. Bake for about 10 minutes.

8. Allow to cool in trays for 10 minutes before moving to racks to cool further. If like me, you are going to put little party toppers onto the honey joys, it is good to do it as soon as they are out of the oven. The mixture then sets around the little stick.

For Christmas 2011, I put together a Greek inspired menu plan. This involved cooking a number of new recipes, including these delicious Greek meatballs.

Over the next few weeks I will share more of the recipes that we cooked. I was very lucky to have one of my younger sister’s staying with me and she worked like a Trojan in the kitchen!

If you are ever in Mildura, you should check out their wonderful cafe and bakery in the Langtree Mall (town centre). I can highly recommend their turkish bread and in particular their turkish bread bacon and egg breakfast!

Greek Meatballs

These lemon and feta meatballs are based on a recipe from Super Food Ideas, April 2011. The main difference between mine and theirs is I oven bake them, where they fry them in batched.

Ingredients:

500 grams lamb mince

1 egg

1/2 cup breadcrumbs

2 cloves garlic

1 teaspoon dried oregano

1/2 cup flat leaf parsley

2 teaspoons lemon rind

100 grams Greek feta cheese

125 grams tzatziki

Method:
1. Preheat oven to 180 degrees Celsius.
2. In a large bowl add the lamb mince.
3. Beat the egg lightly and add to bowl.
4. Crush garlic cloves and add to the meat mixture.
5. Add the dried oregano and bread crumbs to the mix.
6. Finely chop the flat parsley and add it.
7. Grate the lemon so you have 2 teaspoons to add.
8. Crumble 100 grams of Greek feta into the bowl.
9. Add salt and pepper to your taste, then using your hands mix until well combined.
10. Using about a tablespoon worth of mixture, roll it into a firm ball.
11. Place the meatballs onto a tray lined with baking paper.
12. Bake for about 30 minutes or until the meatballs are firm and have turned a golden colour.
<a

Makes about 40.

Family Menu Plan

Baking: Props to my dear friend Lou for this recipe. I have posted this chicken schnitzel recipe before and while the kids prefer that one, the oven baked chicken schnitzel is still very tasty, but much easier and quicker to prepare.

This recipe could easily form part of starters for Christmas day. Just cut the chicken breasts into small strips and as they are quite crispy, they would make a great finger food.

Easy Chicken Schnitzel (Oven Baked)

Ingredients:

3 chicken breasts (My kids ate everything and Mr I and me didn’t get once piece, so I would use at least 4 breasts next time.)

1 cup of mayonnaise

Panko (Japanese) breadcrumbs

Method:
Preheat the oven to 180 degrees Celsius.

I like the chicken to be thin, so slice the chicken breast in half (width ways), then cut it into the size pieces I want for the meal.

Dip the chicken into the mayo and cover completely.<br
