Chocolate almond cake (dairy and gluten free)

This chocolate almond cake is a very dense chocolate cake, not light and fluffy like this one on the blog.

But it is dairy and gluten free, so a great recipe to have up your sleeve if you have friends coming with food intolerances.

I have made this recipe a couple of times and played around with the baking technique. I have cooked it with success both in the oven and in the slow cooker, so have included a recipe for each below. All ingredients and the method are the same, just cooking and resting times differ depending on how you cook it.

Slow cooker chocolate almond cake (dairy and gluten free)

Ingredients:
  • 225gms almonds
  • ½ tsp Himalayan pink salt
  • 2 tbsp coconut sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • ½ cup maple syrup
  • 150 ml coconut oil melted
  • ⅔ cup cacao powder
  • ¾ cup boiling water
  • 3tbsp coconut flour
Method:
  1. Line a 20cm springform tin baking paper.
  2. Turn the slow cooker on high and place something in your slow cooker so that the pan will not touch the base. I use one of those things you place on the hot plate to for coffee.
  3. The coconut oil when added to the mixture needs to be cooled. If you need to heat the oil to melt it, do this first so it has had time to cool slightly.
  4. Add your almonds to the food processor and pulse until of a flour consistency. Don't blend for too long or you will end up with almond butter.
  5. In a medium sized bowl add the grounded almonds, salt and coconut sugar and mix.
  6. In a large bowl add eggs, maple syrup, vanilla extract and the coconut oil. Whisk them lightly.
  7. In a small bowl then add cacao powder and boiling water. Mix until there is no lumps.
  8. Add the cacao liquid to the egg mixture. Whisk gently.
  9. Add the almond mixture into the large bowl with the other ingredients and mix using a wooden spoon.
  10. Add coconut flour and gently mix again.
  11. Pour mixture into the lined tin.
  12. Place gently into the slow cooker and lay a clean tea towel over the rim of the slow cooker. Place on the lid and cook for 3 hours.
  13. Remove gently from the pan and allow the cake to on a rack. Wait for it to be completely cooled before cutting.

  2. Add your almonds to the food processor and pulse until of a flour consistency. Don't blend for too long or you will end up with almond butter.
  3. In a medium sized bowl add the grounded almonds, salt and coconut sugar and mix.
  4. In a large bowl add eggs, maple syrup, vanilla extract and the coconut oil. Whisk them lightly.
  5. In a small bowl then add cacao powder and boiling water. Mix until there is no lumps.
  6. Add the cacao liquid to the egg mixture. Whisk gently.
  7. Add the almond mixture into the large bowl with the other ingredients and mix using a wooden spoon.
  8. Add coconut flour and gently mix again.
  9. Pour mixture into the lined tin and bake for approx 65 - 70 mins. To check if the cake is cooked, use a skewer test or check that it is firm in the middle of the cake.
  10. Allow the cake to cook for 10 minutes in the pan before removing gently and letting it cool completely on a rack before cutting.
