Chocolate Weetbix Slice Recipe

The kids loved this slice. It is easy to make and uses basic pantry ingredients. You wouldn’t have to ice it, if you were worried about the sugar content in the icing.

It makes a great lunch box snack, but if you want it to last for more than a couple of days, you should double the ingredient quantities. I will be next time!

Chocolate Weetbix Slice Recipe

Ingredients:

  • 4 Weet-Bix
  • 1 cup plain wholemeal flour
  • ½ cup desiccated coconut
  • ½ cup brown sugar
  • 1 tablespoon cocoa
  • 75g butter
  • 1/4 cup of water

Icing ingredients:

  • 1 tablespoon cocoa
  • 1 tablespoon milk
  • ¾ cup icing sugar
  • ¼ cup dessicated coconut

Method:
1. Preheat oven to 180ºC.

2. Crush Weet-Bix with your hands into a medium sized bowl. Place butter in a heavy based microwave safe dish and melt butter for about 30 seconds and pour onto Weet Bix.

3. Mix with a spoon to combine.

4. Add flour, coconut, brown sugar, cocoa and water.

5. Mix well with a spoon so the slice mix is well combined.

6. Line a slice tray with baking paper and firmy press the ingredients into it.

7. Bake for about 15 minutes until the slice starts to colour slightly on top.

8. Let the slice cool for about 15 minutes. You can actually ice this slice when it is warm though and I kept it in slice tray, so it was easier to do.

9. Sift cocoa and icing sugar into a bowl (I didn’t and had to work to get the lumps out, better to sift it first!).

10. Pour in milk and stir to create a thickish icing.

11. I used a spatula to spread the icing evenly across the slice.

12. Then sprinkle coconut on top and allow to set.

13. It will take an hour or so to set fully, then you can cut it into pieces for the lunchbox.

14. I cut the Weet Bix slice into 12 pieces.

15. Store in an airtight container for the very small amount of time it will be in the house!
