Pikelets Recipe - Vanilla Yogurt

I have posted my basic pikelet recipe on the blog before. With some inspiration from here, I have tweaked my recipe to make a healthier version.

As the pikelets have greater flavour themselves courtesy of the vanilla yogurt, the kids thought they tasted great straight up without any additional toppings, making them a great addition for the lunch box roster too!

Pikelet Recipe – Vanilla Yogurt Edition

Ingredients:

  • 2 cups plain flour
  • 2 tablespoons caster sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 eggs
  • 2 cups vanilla yogurt
  • 50 mls milk

Method:

1. In a medium sized bowl add flour, caster sugar, baking powder and baking soda and stir to combine.

2. In a separate bowl whisk the eggs.

3. Add the yogurt and whisk well.

4. Add the yogurt mix to the dry ingredients and stir in.

5. The mixture will be quite thick, so add the milk gradually until you get the consistency of batter that you prefer for pikelets (I used the full 50 mls).

6. Add a small amount of butter to a frying pan on medium heat.

7. When melted drop large spoonfuls of mixture into the pan, allowing room for spreading.

8. When bubbles appear, turn the pikelets over.

9. The pikelets take less time to cook on the second side. Using a spatula to lift the pikelet, check that the bottom side is golden, then remove from the pan.

10. Pikelets are ready to enjoy! This batter made 15.

You can store them in an airtight container in the fridge if you want to make up a batch for school lunches. This pikelet recipe is also suitable for freezing.

    Pikelets are a favourite around here… and I make them for the boys probably four times a week. My nanna made them for us when we’d visit after school and I have an image of her in my head every time I make them! Genius idea – I’d never thought to add yoghurt.

      I am surprised I haven’t thought of adding yogurt before this too! I remember eating them after school too.

    Any plans to make an app for Android phones please? Android phones sell at twice the rate of iPhones :-)

      Hi Jacie,

      Thanks for you interest in the app. While the Android phones may sell at a higher rate than iPhones, however according to a recent Distimo report, iPhone apps generated 4 times the revenue of Android apps and iPad app generated 2 times the revenue of Android apps in November last year (most current data I am aware of).

      Add to that the fact that developing an app for Android is far more complex. OS Fragmentation, or ‘major differences between devices’, is a huge issue for developers and it ultimately means it is expensive for development

      So while I would love for the app to be available on Android, I simply don’t have the budget for it at the moment.

          I really need to put an update on the blog actually to let others know, so shall add it to my list of posts to do!

          It is disappointing I know, (my husband has an Android phone!) so it is always still on the table that I would like to have it on Android, but it just needs to be a financially viable proposition for PWK.

    I have added plain yoghurt to my pikelets but never thought of flavoured yoghurt. Will definitely give this a go. I also sometimes add some baby rice cereal for extra fibre.
