Teacake – Apple and Cinnamon

I am quite keen on a teacake and thought I would try adding some fruit and yogurt to the base teacake recipe I use. I made this teacake in the Soup and Co, but you could make it in a traditional blender or by using an electric mixer.

Teacake – Apple and Cinnamon

I used a 25cm spring form cake tin to make the teacake. This is quite a moist, thick cake, so I went in the width of this size tin, making sure it would cook evenly. You could use a bundt tin if you owned one (I don’t!).

Ingredients Tea Cake:

  • 2 1/4 cups self raising flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 125 grams butter, softened
  • 3/4 caster sugar
  • 1 cup natural yogurt
  • 2 eggs
  • 1/2 cup milk
  • 1 large apple

Ingredients Tea Cake Topping:

  • 15 grams butter
  • 1 tablespoon caster sugar
  • 1/2 teaspoon cinnamon

Method:
Preheat oven to 175 degrees Celsius and line cake tin with baking paper.

Core and chop apple into small pieces (if you are not using Soup and Co or blender, you will need to grate the apple).

Sift together the flour, baking powder and cinnamon.

To the Soup and Co / blender /mixer add butter, sugar and eggs. For the Soup and Co I used the Ice program for 1 minuted to begin the blending process for these ingredients. I then changed to the blender function on speed 2 for 1 1/2 minutes.

Add apple and milk to the batter and blend on maximum speed for 1 minutes.

Add flour and yogurt. Blend on speed 2 for 30 seconds, then maximum speed for 30 seconds.

Teacake - Apple and Cinnamon
Pour into cake tin and bake for 40 – 45 minutes.

Use the clean skewer test to check the cake is cooked.

Once cooked allow to sit in tin for 10 minutes, before removing.

Then remove and allow to cool on a rack. I let the cake sit without the topping in an airtight container overnight. You can either add the topping straight away or directly before you serve for the first time.

Combine additional caster sugar and cinnamon and set aside. Melt additional butter in microwave for 20 seconds. Brush cake with melted butter, then sprinkle with cinnamon sugar.
