
Funfetti is a fancy term for adding 100s and 1000s or sprinkles to your baking. I quite like adding 100s and 1000s for the extra crunch they give, so decided to tweak an easy cupcake recipe I use to make them funfetti cup cakes!
Easy Cupcake Recipe With Funfetti Twist
This cup cake recipe only makes 12, so I usually bake a double batch to make it worth my while if I am making them for school lunches. In this instance I was just making them for an afternoon tea one weekend so just made a single batch.
Ingredients:
- 3/4 cup caster sugar
- 190 grams butter
- 1/2 teaspoon vanilla extract
- 3 eggs
- 1 1/2 cups self raising flour
- 1 teaspoons baking powder
- 1 1/2 tablespoons milk
- 1/4 cup 100s and 1000s
Method:
1. Preheat the oven to 160 degrees Celsius

2. Soften butter for about 20 seconds in the microwave. Add to a large bowl with sugar and vanilla.

3. Mix with an electric beater until light and creamy.

4. Add eggs one at a time, beating well each time before adding next egg.

5. Sift combined flour and baking powder into the bowl and beat again until well combined.

6. Add milk to the cup cake mix and using a metal spoon, gently fold through.

7. Add 100s and 1000s and also fold those gently through the cup cake mix. I only used about 3/4 of the sprinkles so I could add some sprinkles directly on top of half of the cup cakes.

8. Spoon mixture into cup cake cases.

9. If you wish sprinkle remaining 100s and 1000s directly on top of the cup cakes.
10. Place in the oven and bake for about 30 – 35 minutes.
11. Check with a skewer to see if they are ready and once they are remove them from the oven tray on to a cooling rack.

12. Once cooled, peel back the cup cake wrapper and enjoy!

Apologies it was just an over sight. I have edited the recipe above to include the flour in the ingredients. It was 1 1/2 cups self raising flour.

I just made these – yum – but mine don’t look as pretty as yours, they kind of exploded from their cases. Where do you get your cute cupcake cases from?
