I was inspired to put together this Slow Cooker Lemon dish after seeing Nigella Lawson’s Slow-Roasted Garlic and Lemon Chicken (not a slow cooker recipe).

I just thought the flavours of chicken and lemon cooked slowly would be beautiful – and they were!

Slow Cooker Lemon Chicken

Ingredients:

  • 4 tablespoons flour
  • 1 kg chicken breasts (approx 4 breasts)
  • 1 tablespoon olive oil
  • 1 bunch spring onions
  • 3 cloves garlic
  • 1 lemon
  • 1 tablespoon brown sugar
  • 1 cup chicken stock
  • 1 tablespoon corn flour
  • 4 tablespoons water

Method:
Slow Cooker Lemon Chicken
1. Finely slice spring onions and place in slow cooker.

2. Crush garlic directly into slow cooker.

3. Cut lemon in half and slice about 4 thin slices of lemon, then squeeze the juice from it. You will need at least a quarter cup of lemon juice.

4. Slice the chicken breasts in half width ways and then cut into strips about 1.5cm wide.

5. Add flour to a bag and then add chicken and toss chicken in flour.

6. Heat oil in a frying pan on a medium heat and add chicken and brown chicken.

7. Once browned add the chicken to the slow cooker.

8. In the frying pan you cooked the chicken add the lemon juice, sugar and stock.

9. Cook on a medium heat for a couple of minutes to gather all the flavours, then pour over the chicken.

10. Add the lemon slices to the slow cooker.

11. Pop on the lid and then cook on low for 7-8 hours or on high for 3-4 hours.

12. 30 minutes before serving, mix together the corn flour and water, mix until smooth, then add to the dish to thicken the sauce.

13. Cook on high for a further 30 minutes until thickened.

We served this with brown rice which went super well with it, but you could serve it with veggies or even a salad.

        So I made this last night for dinner – I have a Le Creuset, so I semi followed yours and semi followed Nigella, and got something in the middle!

        It was WAY too lemony for me :x But it did look great! I did segments of two lemons, but it was overpowering. Not sure if I’ll try it again with one, or just await your next recipe!

    Looks delicious!

    I’ve been wanting to ask: Do you prepare lunches for your hubby to take to work? The whole lunch aspect is becoming a major part of my menu planning.

      Mr I takes left overs when available or sandwiches. Buys it probably twice a week now as we have less and less left overs!

      I think I might start planning more with lunches, I don’t do it as well as I could.

    I made this tonight Nic and it was delicious!!!! I did it in the wok as I was home all day so didn’t need to be prepared early. It took about 15 mins and was so easy and really flavoursome. I didn’t add the cornflour and water as it thickened nicely in the pan.

    Definitely one of my new faves.
