Italian-Meatballs

This recipe for Italian Meatballs is a hybrid of ones I looked at online and in recipe books. This meal was a massive hit with the kids, with the 12 year old declaring it “awesome”. So expect to see this added pretty frequently to the family menu plans!

Italian Meatballs

Ingredients:

  • 3 slices of bread
  • 1/2 cup milk
  • 1 onion
  • 500 grams beef mince
  • 1 egg
  • 1 tbs basil leaves dried (fresh would be better, probably about 3 tbs but I didn’t have any fresh!)
  • 1 tbs parsley leaves dried (again fresh would be better!)
  • 1/2 cup parmesan cheese grated
  • 2 tbs olive oil
  • 2 cloves garlic
  • 500 grams pasta sauce
  • 500 grams spaghetti to serve with

Method:

    1. Remove crusts from bread and then tear into small pieces and place at the bottom of a large bowl.

Italian Meatballs - bread

    1. Add milk and let soak for at least 5 minutes.
    2. Grate onion.
    3. Lightly beat the egg.
    4. Add onion, mince, basil, cheese, parsley and egg to the bread.

Italian Meatballs - mixture

    1. Add salt and pepper to taste and use hands to combine meatball mixture.
    2. Roll into small balls and place on a lined baking tray.
    3. Bake for about 30 minutes or until the meatballs are firm and are browning.

Italian Meatballs - cooked

    1. Heat oil in a heavy based saucepan.
    2. Fry garlic for a minute or two, then add pasta sauce and bring to the boil.
    3. Reduce heat to very low and add meatballs.
    4. Cook pasta and serve meatballs atop of spaghetti.
