Cereal Muffins

My kids like to eat the Mini Wheat® cereal for breakfast. The only problem I have with the cereal is how much it breaks down in the box. The pieces crumble pretty easily, so when the box is finished, there is always a huge amount of wastage with the crumbs. The kids won’t eat the crumbed cereal, so up until this week end I have been throwing it out. I really detest throwing out good food.

I finally noticed the Mini Wheat® box had a recipe for Mini Wheat® muffins on the side of the box. This was a perfect solution for the wastage, so we turned the left over cereal into muffins. I didn’t use the recipe from the box, but just modified my favourite muffin recipe.

They were a hit with the kids and they are healthier than the white choc chip ones that I usually bake! They have also got me thinking about other cereal substitutes I could use to mix with the muffins. I would love to hear if you have tried to make cereal muffins.

Cereal Muffins Recipe

Ingredients:

  • 2 cups self raising flour
  • 1 cup crushed Mini Wheat® cereal
  • ¾ cup caster sugar
  • 1 tsp ground cinnamon
  • ¾ cup milk
  • ½ cup canola oil
  • 2 eggs

Instructions:

  1. Preheat oven to 180 degrees Celsius.
  2. Sift flour, sugar, cereal and cinnamon into a bowl. Mix and make a well in the middle.
  3. In a separate bowl mix the remaining ingredients.
  4. Pour the liquid ingredients into well and mix with a wooden spoon. Muffins are best when made quickly and not over mixed.
  5. Spoon into well greased muffin pans or patty pans in muffin tray. We made 12 large and 12 small muffins.
  6. Cooking time depends on the size and oven, but 12 -15 minutes is about average for the standard patty pan size.
