Yo Yo Biscuits Recipe

This fab recipe comes from my dear friend Lou Woods. Lou was one of those people that from the first time I met her, I knew we were going to be great friends. About three years ago, Lou and her family followed a path that our family had also traveled, moving from inner city Richmond to the ‘burbs of Surrey Hills. We had both had boys in prep at our school, a toddler and a baby each. We have since had another baby each only a couple of months a part. As you can tell by the beautiful presentation of the Yo Yo Biscuits above, Lou has an super eye for presentation and design. And best of all she talks as nearly as much as I do, so we have fab conversations! Thanks for sharing your recipe Lou.

As my kids will attest I don’t have a big baking repertoire but these biscuits are a staple as they’re quick and easy and present well and only use 4 simple ingredients which I always have on hand.

A few notes: custard powder varies in colour. White Wings custard powder will give you a paler colour biscuit, the custard powder I used was Foster and Clarke which produces a yellower colour.

Lou’s Yo Yo Biscuits Recipe

Ingredients:

  • 1 ¼ cup plain flour
  • ½ cup custard powder
  • ¼ cup icing sugar
  • 187g butter

Butter Icing:

  • ¾ cup icing sugar
  • 75 grams softened butter
  • 1 teaspoon liquid if required

If you prefer softer icing whip the butter and icing sugar with a hand held electric whisk, for harder icing add more icing sugar and a few drops of liquid. You can add some lemon juice or vanilla essence to icing if you prefer a less buttery flavour.

Method:

  1. Set oven at 180 degrees (or 150 in a fan forced oven). Grease two baking trays or line with baking paper.
  2. Soften butter (do not melt) I usually microwave it for 15-20 seconds.
  3. Sift dry ingredients and rub in butter, work into a stiff dough.
  4. Roll into balls (approximately 1 teaspoon in each) and place on oven tray. Using a fork, flatten each ball slightly to give the fork indentation. Try and keep all of the biscuits a similar size.
  5. Bake for 8-10 minutes (depending on oven and size of biscuits).
  6. Cool biscuits on cake cooling trays and sandwich together in pairs with butter icing. If I have time or if I am making these for a special occasion I pipe the icing in the middle of the biscuit.
